Chicken Thighs (large package 8-10)
1 Large Tomato
Poblano Peppers (overripe and red)
Heavy Cream (or Coconut Milk for a lower calorie version)
Penzie's Curry Mix (or preferred curry mix)
Jerk Seasoning
Olive Oil
Salt
Black Pepper
Onion
Preparation
In a large skillet add, 1/8 Cup Curry Seasoning,
Allow to cook for 5-10 minutes on medium heat to allow to combine, stirring frequently.
Add Chicken thighs to braising liquid.
cook on Medium to Low heat until meat is fork tender. You want the mixture to be barely bubbling. This step will take 60-90 minutes.
Serve over Jasmine rice, with vegetable of your choice. Add Salt and Pepper to taste if needed.
