This is a perfect quick side dish for the less experienced cook. This Green Bean salad is a great healthy meal to bring when you are asked to bring something to a cookout. I hope you enjoy this as much as me and my family.
Grocery List
1 Shallot
8oz Cherry Tomato
16 oz Fresh Green Bean
2 Tbsp Caper
Salt
Pepper
1 1/2 Lemon
1 Tbsp Green Onion
Preparation
Cut ends off of Green Beans
Boil pot of water salt generously
Blanch Green Beans for 5 minutes or until "Al Dente"
Quickly empty boiling water and give the Green Beans an ice bath to stop cooking.
Quarter Cherry Tomatoes
Mince 1 Shallot
Thinly slice Green Onion
In a large mixing bowl combine Green Beans, Shallot, Tomato, Green Onion.
Add 2 1/2 tsp Olive Oil
Add the juice of 1 1/2 Lemons
Add 2 tbsp Capers
Generous Pinch of Salt (to taste)
Generous inch of Pepper (to taste)
Mix well and let sit in the refrigerator until time to serve. (Quick Tip: the longer it sits the more time the flavors have to meld together)
