Green Bean Salad W/ Capers and Lemon Vinaigrette


This is a perfect quick side dish for the less experienced cook. This Green Bean salad is a great healthy meal to bring when you are asked to bring something to a cookout. I hope you enjoy this as much as me and my family.

 

Grocery List


  • 1 Shallot

  • 8oz Cherry Tomato

  • 16 oz Fresh Green Bean

  • 2 Tbsp Caper

  • Salt

  • Pepper

  • 1 1/2 Lemon

  • 1 Tbsp Green Onion


 

Preparation


  1. Cut ends off of Green Beans

  2. Boil pot of water salt generously

  3. Blanch Green Beans for 5 minutes or until "Al Dente"

  4. Quickly empty boiling water and give the Green Beans an ice bath to stop cooking.

  5. Quarter Cherry Tomatoes

  6. Mince 1 Shallot

  7. Thinly slice Green Onion

  8. In a large mixing bowl combine Green Beans, Shallot, Tomato, Green Onion.

  9. Add 2 1/2 tsp Olive Oil

  10. Add the juice of 1 1/2 Lemons

  11. Add 2 tbsp Capers

  12. Generous Pinch of Salt (to taste)

  13. Generous inch of Pepper (to taste)

  14. Mix well and let sit in the refrigerator until time to serve. (Quick Tip: the longer it sits the more time the flavors have to meld together)

  15. Enjoy with friends, or family!
