Ingredient List
4 Cups bread flour or 00 pizza flour
2 Cups AP flour
1/2 Cup warm water
1/2 Tbsp sugar
2 yeast packs
1/3 Cup wine (red or white)
4 Tsp salt
2 Tbsp olive oil
Less then 2 cups water
Pinch black pepper
Preparation
Using small bowl combine 1/2 Cup warm water, 2 yeast packs, and 1/2 Tbsp of sugar.
Allow to sit and let the yeast activate, this usually takes about 15 minutes. It will start to bubble up.
Mix all dry ingredients together, I use a Ninja foodie with a bread hook attachment. Add flour, salt, and a pinch of black pepper.
Combine all remaining wet ingredients and pour into a running food processor. This will be your 1/3 Cup wine, 2 Cups water, and 2 Tbsp Olive oil.
Allow the mix well and check the consistency. If it is still really sticky add more flour until you can pull the dough out clean and nothing is stuck in the food processor.
Form into ball
Place ball in a greased bowl and cover with a towel. Leave this in a warmer area in the house and allow to rise for one hour.
Form your pizza shape, using a fork poke holes on everything except where the crust will be.
Allow your shells to rise for another 30 minutes.
Preheat oven as hot as it will go, I use a large pizza stone to retain heat.
Add sauce and desired toppings
Brush crust with Olive oil and sprinkle with salt and Parmesan cheese.
Once oven is preheated place pizza directly on pizza stone. Cook for around 15 minutes or until crust starts to brown.
Enjoy that pizza, you made from scratch.
