1 Yellow Tomato
4 small Ripe Tomatoes (I like Campari Tomatoes)
2 Poblano Peppers (1 if it is large)
2 Limes
Salt
1/4 Vidalia Onion
Cilantro
4 Cobs of Corn
Olive Oil
Preparation
Optional Step (Fire roast corn on the cob). You can do this with a grill, with tongs and your gas stove, or under the broiler in your oven. This will give the corn another layer of flavor that you can't really beat. You have to cook the corn either way, so you may as well do it the best way.
Dice 1/4 Vidalia Onion, 1 Yellow Tomato, 4 small Ripe Tomatoes, and 1 large or 2 small Poblano Peppers.
After Corn is cooked and cooled down strip from the cob using a sharp knife.
In a medium size bowl mix all diced ingredients and corn.
Add Fresh Cilantro (to taste)
Add 2 limes worth of Lime Juice.
Add 1 TBSP Olive Oil
Add Salt to taste
Stir well and allow to sit in the fridge for at least 30 minutes to allow the flavors to meld together.
Now it's time to enjoy this with Tortilla Chips or on your favorite type of taco meat.
